Firepot's dal uses five kinds of lentils, simmered with onion, garlic, cumin and chilli, then combined with basmati rice, spinach and garam masala and finished with coriander and a squeeze of lemon.
No single lentil gave the texture and flavour they wanted, so they chose five. The result is filling and satisfying, with a heat that is comforting but not too hot. Perfect for cold nights on the mountains.
